Hickory Nut Drop Cookies

Ingrients & Directions


2 c Sugar 4 c Flour
1 c Shortening; beat well 1 ts Baking soda
2 ea Eggs 1 ts Baking powder
1 c Milk; sour 1 c Nuts; chopped
Or 1 c Raisins; chopped
1 c Buttermilk

Sift soda and baking powder in with flour.

Note: Combine remaining ingredients, mix well. Drop by teaspoonfuls
onto cookie sheet. Bake in moderate 375 F. oven.

Hand Print Cookies

2 pk Refrigerator sugar cookie
-dough rolls
Flour for board and rolling
-pin
Heavy card-type paper or
-cardboard
Various icings in tubes from
-supermarket
Various candies for
-decorating cookies

Cut each sugar cookie dough roll in half. Form each into a ball and
flatten into a disk. Wrap in plastic wrap and refrigerate about 45
minutes until firm. Draw and cut out hand shapes of family members to
use as guides for making cookies. Preheat oven to 400 degrees F.
(check temperature on cookie dough package.) Working with one dough
ball at a time on floured board, roll out to about 1/4 inch thick.
Use enough flour so dough isnt sticky and can be easily removed to
cookie sheet. Place paper hand cut-out on dough and trace with a
sharp knife, making cookie hands. Place on cookie sheets & bake until
light golden brown. Remove from oven and let cool on rack completely
before decorating. Repeat with all cookie dough. Decorate using
icings and candies. You can even write family members names on each.
This is the fun part to do with kids!

Blue Ribbon Chocolate Chip Cookies

2 1/2 c All-purpose flour
1/2 ts Baking soda
1/4 ts Salt
1 c Dark brown sugar – firmly
-packed
1/2 c White sugar
1 c Salted butter – cold and cut
2 lg Eggs
2 ts Vanilla extract
2 c Semi-sweet chocolate chips

Directions: Preheat oven to 300 degrees. In a medium bowl, combine the
flour, baking soda and salt. Mix well with a wire whisk. In a large
bowl, blend with an electric mixer, the brown sugar, white sugar at
medium speed. Add the butter and mix to combine. Add the eggs and
vanilla extract and mix at medium speed to form a thick dough. Do not
overmix. Add the flour mixture and the chocolate chips. Blend at low
speed until just mixed. Drop by rounded tablespoons onto an ungreased
cookie sheet. Bake for 22-24 minutes until golden brown.

Can’t remember where I got this one – Betty Crocker Cookie Book, maybe?
Cream sugar and margarine, add egg, molasses, then dry ingredients. Form
into 1″ balls. Dip in sugar, then bake on greased cookie sheet for 12
minutes at
375 degrees.

Eggless Cookies

Ingrients & Directions


2 c Sugar 1 ts Baking soda
1 c Shortening 1/4 ts Salt
1 c Milk; sour Flour; to roll out

Note: No directions. Cream sugar, shortening. Add sour milk, soda and
salt. Stir in enough flour to make a stiff dough which can be rolled.
Roll out, cut, bake in 425 F. oven.

Hamburger Cookies

Ingrients & Directions


2 tb Vanilla frosting
12 Vanilla wafers
2 tb Green-tinted coconut
6 Chocolate-covered round mint
– cookies or patties
Honey, warmed
Sesame seeds

For each hamburger cookie, spread 1/2 teaspoon of frosting on flat
side of one vanilla wafer. Place one teaspoon coconut and one mint
cookie on frosting. spread flat side of second vanilla wafer with 1/2
teaspoon frosting; place frosting side down on mint cookie. Brush top
of “hamburger” with honey; sprinkle with sesame seeds. Repeat to make
5 more cookies. Recipe can be doubled or tripled easily. Tip: To tint
coconut, place coconut and 1 to 2 drops of green food color in a
resealable plastic bag. Seal bag and shake until coconut is uniformly
colored.

Black Pepper Cookies

Ingrients & Directions


3/4 c Butter
1 ts Freshly ground pepper or
-black pepper
3/4 ts Cinnamon
1/4 ts Ground cloves
1 1/2 ts Vanilla
1 c Castor sugar
1 Egg lightly beaten
1 1/2 c Self raising flour
3/4 c Good cocoa

Heat oven to 190 degrees. Lightly grease baking sheet. Cream butter,
pepper, cinnamon, cloves and vanilla. Beat in sugar and continue
beating until light and fluffy.

Beat in the egg. Sift flour and cocoa into bowl and blend dry
ingredients thoroughly with the butter and sugar mix until a firm
dough.

Lightly flour hands and roll spoonfuls of the dough into balls about
2cms. Put on a baking sheet and press. Place in centre of oven and
cook for 12 minutes. Cool for a minute on tray and cool on cake rack.
When cool, store in airtight container.

Try with dessert, great with coffee of tea (from the North Coast, of
course).

~ Try these cookies – great after dinner with coffee, or anytime!
Maybe warn the children about the black pepper before letting them
try!

Molasses Cookies

1 c Shortening
1 1/2 c Sugar; brown
2 Eggs
1 c Molasses
1 c Syrup, corn white or golden
1 1/2 c Milk
3 ts Baking soda
1 ts Ginger
2 ts Cinnamon
6 c Flour

This is from an Amish cookbook. I have modified the directions to explain
better: Cream the shortening and sugar. Add the eggs, molasses and syrup.
Then sift together the dry ingredients and alternately stir in the flour
and milk. Bake for 5 to 8 minutes in a 375 degree oven. The molasses in
the cookies make them very prone to burn so check often.. the recipe could
be halved as this makes about 80 cookies!!

Cinnamon Drop Cookies

1/2 lb Raisins 1 ts Baking soda
1 1/2 c Brown sugar 1 ts Vanilla
1 c Shortening; scant 1 ts Cinnamon
3 ea Eggs 3 tb Raisin juice
1 c Walnuts; english 3 c Flour
1 ts Baking powder 1/2 ts Salt

Cook and cool raisins. Mix and drop by spoonful on baking sheet. Bake
in moderately hot oven for 15 minutes.

Hamantaschen Cookie Dough #2

Ingrients & Directions


1/2 c Butter
1 c Sugar
2 ts Baking powder
1 Egg
Vanilla or lemon extract
2 tb Milk
2 c Flour
1/2 ts Salt (or more)

Cream butter, sugar and add egg. Mix and sift flour and baking
powder and salt and add some of mixture to creamed butter and sugar
mixture. Add the milk and rest of flour. Add flavoring. Roll dough
out, cut into rounds and place spoonful of filling on each round.
Form into triangles and bake at 375 F. for 15 to 30 min. depending on
size.
