Ingrients & Directions
1 1/2 Sticks oleo
1 c Brown sugar
1/2 ts Baking powder
2 c Rice Krispies
1 sm Can coconut
1 c Nuts
1 c Sugar
1/2 ts Salt
1 ts Baking soda
2 c Flour
4 Eggs
1 c Oatmeal
Have butter melted. Mix all ingredients. Drop by teaspoon on
ungreased cookie sheet. Bake about 10 minutes at 350 . Remove from
pan while hot. Makes about 80 cookies. Recipe may be doubled or cut
in half.

8 oz Pitted chopped dates
1 c Granulated sugar
1/2 c Butter -; (1 stick)
1 c Finely chopped pecans
2 Eggs; beaten
1/4 ts Salt
1 ts Vanilla
3 c Crispy rice cereal such as
-Rice Krispies
2 1/4 c Shredded coconut
Finely chop dates. Combine dates, sugar, butter, pecans, eggs and salt in
large skillet with heavy bottom. Cook over low heat 8 to 10 minutes, or
until thick, stirring constantly. (Mixture changes to a thick consistency
quickly toward end of cooking time.) Let cool 5 minutes. Add vanilla and
cereal. Mix well. While mixture is still warm, form into 1-inch balls. Work
quickly, because mixture sets as it cools. Roll balls in coconut. Let
cookies dry at room temperature. Store in covered container. To freeze,
wrap cookies individually to prevent sticking. Yields 52 (1-inch) cookies.
Tester’s note: Easy-to-find ingredients, fast preparation, little cleanup.
Making the balls smaller is an option. These cookies remind me of candy
with a crunch. Instead of coconut, you also can use colored sugar or
sprinkles.

Ingrients & Directions
1 1/2 c All-purpose flour
1/2 ts Baking soda
1/4 ts Salt
1/4 c Butter; softened
1/4 c Nonfat cream cheese;
-softened
1 c Sugar
1/4 c Egg beaters(TM) 99% egg
-substitute
1 ts Vanilla
2 c Rice krispies(TM)
4 oz Chocolate chips, reduced fat
Vegetable cooking spray
1. In small mixing bowl, combine flour, soda and salt. Set aside.
2. In large mixing bowl, beat together butter, cream cheese and sugar
until light and fluffy. Add egg substitute and vanilla. Beat well. Add
flour mixture, mixing until combined. Stir in Rice Krispies cereal and
chocolate morsels. Drop by level measuring-tablespoon onto baking sheets
coated with cooking spray.
3. Bake at 350oF about 12 minutes or until lightly browned. Remove
immediately from baking sheets and cool on wire racks. Store in airtight
container.

1 1/2 c Dates, chopped

Cook over a low heat for 10 minutes, stirring constantly. Remove from
stove and add 2 cups of Rice Krispies.
Roll in balls and dip in coconut.
*Would recommend from nil to 1/2 c sugar. Dates, coconut and Rice
Krispies supply sufficient sweetener in my opinion.

*DIRECTIONS*
Cream butter and sugars, add eggs. Blend in sifted flour, remainder of dry
ingredients. Stir in Rice Krispies and Oatmeal. Add chocolate chips.
Bake at 350 F for 10-12 minutes.
(Warning–this sucker makes a LOT of cookies. Good to have around when you
have to come up with a batch but don’t have the time.)

1 Stick of margarine 2 c Rice Krispies
1 c Brown sugar 1/2 c Nuts
1 c Chopped dates 1/2 ts Vanilla
1 Egg, beaten Coconut
Melt margarine in a large skillet; add brown sugar, dates and egg.
Stir well and boil for 5 minutes. Remove from heat; add Rice
Krispies, nuts and vanilla. Stir well. Spoon on wax paper. Shape

2 c Sifted all purpose flour 1 c Brown sugar
1 ts Baking soda 2 Eggs
1/2 ts Baking powder 1 ts Vanilla
1/2 ts Salt 1 c Coconut,shredded opt
1 c Butter 4 c Rice Krispies
1 c Granulated sugar
Sift together flour, baking soda, baking powder and salt. Mix
coconut, and rice crispies. Set aside. Cream butter, slowly add
sugars and creaming thoroughly. Add eggs and vanilla. Continue
beating until fluffy. Add sifted dry ingredients and mix well. Add,
mixing thoroughly coconut (optional) and rice krispies. Shape into
balls the size of walnuts. Place on lightly greased sheet. Bake at
375 for 10 minutes. Makes about 6-1/2 dozen cookies

1 c Shortening 4 c Flour, all-purpose
1 lb Brown sugar 2 t Baking soda
2 c Oatmeal 1 c Pecans
1 pk 6 oz Chocolate chips 1 c Coconut
2 c Sugar 2 t Baking powder
4 ea Eggs 2 c Rice Krispies
You’ll need to start with a big bowl for this one. If this is your
first try, you might want to do a half-batch.
Cream butter and shortening. Add brown sugar, eggs, sugar and
vanilla. Sift and add the flour, baking powder, baking soda; add
oatmel, chocolate chips, pecans, Rice Krispies and coconut. Use 1/4
measured cup per cookie or ice cream scoop. Put on ungreased cookie
sheet, 6 to a sheet. Cook 15 minutes at 350 F; let cool 5 minutes
before removing from sheet. Makes 30-40 cookies.
